Easy Chinese Recipe - Steamed Eggs with ground pork

This is my favourite recipe. There is no hard and fast rule, not much preparation, no dishes piling up for washing and most importantly its just so.... yummy!


Ingredients:
1. 1/2 lb ground pork
2. 3 eggs
3. 1 tsp chopped scallion
4. 1/2 cup water or chicken stock

Seasonings:
Soy sauce & Pepper

Directions:
1) Season ground pork with soy sauce and pepper
2) Season eggs with soy sauce and pepper. Beat eggs with fork until light and fluffy.
3) Combine ground pork, beaten eggs and water. Mix well.
4) Steam the mixture for about 15 minutes or until the mixture is formed.
5) Garnish with chopped scallion and serve hot with rice.

Remark:
The proportion of ground pork, eggs and water are very individual. Use more water if you prefer jelly like texture, more eggs you like it firm, or more ground pork if you are a meat lover.

Try other ingredients such as mushroom instead of ground pork! Add sesame oil if you have it at home.

If you have fried shallot at home, add 1 tsp into the mixture at direction (2).

How to prepare fried shallot: 1) cut small shallots into thin slices. 2) fry them with cooking oil until golden brown. 3) keep the fried shallots (including the oil) in a jar.

I use 1 tsp fried shallots to steam fish, flavour soups and noodles. To prepare, I normally use 1 lbs of shallots each time and they last for months.
