Hi, I will like to introduce this special condiment to your kitchen! It is a bit time consuming, need extra care yet every easy. I find it worth the efforts as they are so handy when come flavouring your meals.
You may find this fried shallots in major asian supermarkets. They only sell the fried shallot flakes i.e. without the oil. A good fried shallots should be dipping in its oils. They remain very crispy for months. The oil is full of fragrance. Adding a few drops of this shallots and oils to any of your dish are just so incredible. Store bought version is just not there.
How to prepare Fried Shallots:
1) cut 1 lbs small shallots into thin slices.
2) fry them with cooking oil until golden brown. The amount of oil should be enough to blend in and cover all shallots.
After you remove them from the stove, the shallots will continue to cook from the heat of the oil. So be very cafeful not to burn your efforts!
3) keep the fried shallots and oil in a jar for use at anytime.
